Food Hygiene Training
Basildon Council provides the CIEH Foundation Certificate in Food Safety, which is equivalent to their previous CIEH Level 2 Food Safety Certificate. All staff who handle food in any business must have sufficient food hygiene training for the role they undertake.
Required levels of food safety hygiene training
The Food Hygiene Regulations [(EC) No. 852/2004] require that all food handlers must be supervised, instructed and/or trained in food hygiene matters appropriate to their work activities.
It is recommended that this training takes the form of an accredited food hygiene course such as the Level 2 Award in Food Safety in Catering.
It is the responsibility of the food business operator to ensure this training is in place.

**Generally, this includes food which is cooked or ready to eat. Person(s) who handle open high risk food could include, for example - commis chef, cook, catering supervisor, kitchen assistant and bar staff who prepare food.
